Some dishes do require roasted almonds. Roasting brings out the nuttiness and changes the texture of a dish. To roast almonds, lay the required quantity of almonds flat on a baking tray and roast in a 200°C (400°F/Gas 6) oven for 10–15 minutes. The almonds should be nicely golden all the way through. Allow to cool a little before removing the loose skins by rubbing the nuts in a tea towel (dish towel) and then discarding the skin.
