Morcilla are sausages made from blood, rice, onions and spices. They have a lovely velvety texture and can impart a subtle spicy flavour to a dish. They are harder to find than chorizo. If you can’t readily find morcilla use black pudding instead, but be aware that using black pudding as a substitute may impart a nutmeg flavour instead of the cinnamon that is used in making morcilla. Large morcilla weigh around 500 g (1 lb 2 oz).
