The best way of roasting nuts and seeds is to dry roast them in a saucepan. Use just enough seeds or nuts to cover the bottom of the pan, place over a high flame and, once hot, shake violently to keep the contents moving. They are done when they smell aromatic and change colour. This method is safer than roasting them on a baking sheet in the oven where they take longer and can sometimes be entirely forgotten until the smell of burning alerts you.
