Well known for his long-running cookery column in the Guardian, Colin Spencer is a prolific and versatile writer, whose cookery books have done much to change the poor public image of the vegetarian diet. He first became vegetarian on ecological grounds – concerned by the plight of the world’s hungry, and the use of huge grain stocks to feed animals reared for meat. Since becoming vegetarian he had devoted himself to discovering delicious gourmet recipes based on vegetable foodstuffs and to persuading a sometimes sceptical public of the new health and vigour that a good vegetarian diet can bring. He lives in a cottage in the depths of Suffolk woodland where he spends most of his time writing and creating new recipes to please himself and his readers.
