It is my belief that fresh and natural is best; this is reflected throughout the book and within my boutiques. When making products, I like to use fresh herbs and fruit purées to create the most natural flavour and we use high-quality butter and cream. In society, we are encouraged to frown upon our consumption of salt, sugar and fats, but these should not be totally removed from our diet. To quote the Roux brothers,... used in moderation, sugar and salt are essential to a balanced diet and our physical well-being. So enjoy a Sunday afternoon with family and pâtisserie and do not feel guilty; enjoying eating good food is one of life’s pleasures.
