To Line Deep Square or Rectangular Pans with Baking Paper

  1. Place the pan in the center of a square or rectangle of baking paper large enough so that the paper that extends beyond the pan will cover the sides.
  2. Place a ruler against one side of the pan and draw a line along the edge next to the pan, continuing to the end of the paper. Repeat on all 4 sides of the pan to create intersecting lines with a box the same size as the bottom of the pan in the center. Take into consideration that you are drawing on the outside of the pan, so make the square or rectangle slightly smaller.
  3. Cut away the corner squares (Figure 1-22), leaving a cross-shaped piece of paper (Figure 1-23).
  4. Place the paper in the pan.
