We all know how when we have a cold food just seems to lose its flavour and everything tastes the same. That’s because smell is without doubt the most finely tuned of all the five senses. So the first thing to do is to sniff the chocolate and see what you can smell. Some of the aromas will remind you of intense fruit, wood, tobacco, caramel or even burnt rubber. Like a good wine, a good chocolate will have a well-balanced, pleasing smell.
