Almost twenty years have gone by since I first opened Rococo, and things have come a long way. I still love chocolate with a passion, and I am so happy to have been able to carve my own niche in this extraordinary business, which continues to give so much pleasure to so many people. I really enjoy the opportunity to experiment with flavours and types of chocolate in a constantly evolving creative process. My hope is that this book will allow you to share some of that enjoyment.
