Green Salad may be served with virtually every lunch or dinner, either instead of or as well as vegetables. It also has the magical effect of making you feel less full if you have overdone it a little!
It is often difficult to get just a plain green salad in a restaurant. When you ask for a green salad you will quite possibly be given a mixed salad with peppers, tomatoes, cucumbers etc., and whereas there are many variations on a theme of green salad, basically it should be made up of different kinds of lettuces and salad things. The variety of lettuces one can buy in the shops has improved out of all knowing. Up to recently, the only lettuce that was widely available was the soft butterhead lettuce, but now Chinese leaves, iceberg and raddichio are becoming easier to find and lately we have been able to buy several varieties of the frizzy lettuces e.g. endive and the lovely frilly bronze-tinted lollo rosso.
