Once you get them home, they’ll keep at room temperature for a few days. But I usually keep them in a loosely covered container or paper bag in the refrigerator. Freezing them is a great way to preserve their flavor and color. Their texture is lost in freezing, but for pastes and cooking that is not an issue.
