All varieties of nuts and nut pastes can be used to flavor ganache. Toasted nuts can be used to infuse cream, or nuts can be chopped and added to the ganache once it has been fully blended for flavor and texture. Nut pastes provide more concentrated flavor and can be added after the chocolate and cream or butter are blended together. The amount of nut paste required will vary depending on the type of nut, the composition of the paste, and the desired flavor of the finished product.
