CURLED KNIFE-DIPPED FLOWERS: Use a knife to create petals using the technique outlined on page 295, but before the chocolate sets, place the acetate sheet in a half-tube to create curled petals. Once the chocolate has set, remove the curls from the acetate sheet and assemble the flower as described above. If desired, use a sphere mold to create a chocolate sphere and place it in the center of the flower after the first ring of petals has been set, then add additional petals as desired around the sphere. To create a bigger flower, add additional petals underneath the outside row by pushing them into the circular chocolate base before it has completely set.
