Painting is a great way to add two-dimensional decoration to a showpiece, while piping makes it possible to build up more dimension. This chapter will illustrate how to create three-dimensional shapes and figures by building up chocolate using the piping and spot-tempering techniques, as well as how to use molds to create larger figures. There are several different techniques that can be used to bond molded chocolate pieces together to create an animal or other type of figure.
