Testing the seal

When the bottles are quite cold, preferably the day after processing, the clips or screw-bands should be removed and each jar carefully lifted by the lid. If the lid remains firm, a vacuum has formed, but if the lid comes off, the jar has not sealed properly and the fruit will not keep. If you wish to re-seal, look for the fault that has caused the failure to form a vacuum, remedy this, and re-process as soon as possible. Remember that even a sealed jar may not keep unless the processing has been done correctly; that is why it is important to follow the instructions carefully.
