In 2003, I decided to donate my part of the proceeds from The French Kitchen to Médecins Sans Frontières, an organization I have supported for many years which provides essential medical aid for some of the poorest and most troubled countries in the world.

That year I went with MSF to the Congo to see for myself how the money was being used to combat sleeping sickness, a fatal disease if left untreated, which kills up to half a million people a year. We travelled up the Congo by canoe and riverboat, screening and treating whole villages for the disease. Without treatment, every person who tested positive would have died.
