Simple fruit sauces are the traditional embellishment for myriad Jewish dishes, including latkes, blintzes, and matzoh brie, and a superb accompaniment to brisket and pot roast. They are equally good on their own as dessert, with perhaps a few good cookies, or as a low-calorie lift for plain yogurt or cottage cheese. And don’t forget waffles, pancakes, pound cakes, and such.
Sweetened with reduced fruit juice, not sugar, these fresh-tasting sauces have an intense fruit flavor. After you’ve become familiar with these recipes, create your own favorites, capturing the season’s bounty and flattering it with well-chosen spices and dried fruits.
