Scald and then chill can, cover and dasher of freezer before using. Adjust can in tub, put in the mixture, then the dasher and cover; adjust the crank, and pack with finely chopped ice and rock salt; this must be higher around than the mixture is inside.
Use three parts of ice to one part of rock salt for freezing, and use four parts ice to one part rock salt for packing afterwards.
Ice cream must be frozen slow and steadily; water ices steadily five minutes. Let stand five minutes, turn again five minutes; repeat until frozen.
