Tortes are cakes that contain no butter, but are made rich with nuts and light with eggs, while bread or cracker crumbs usually take the place of flour.
The nuts are chopped, rolled or ground fine, mixed with crumbs and spices. The eggs are beaten separately. Beat yolks with sugar and add nuts, crumbs and spices. Fold the whites in last. Bake slowly in moderate oven.
