Le Cordon Bleu Alumnus, Aarón Díaz is a Cocktail Chef & the CEO of Carnaval, a trendy restaurant in Lima, Peru. Aarón Díaz’s Carnaval made it in the World’s 50 Best Bars list, currently at 13th position, and Díaz is the first Peruvian bartender to feature in it.
With more than 19 years of experience in the management of top-level restaurants, bars and franchises, he was involved in leading the implementation and re-engineering of businesses through concept creation, operations and the development of cocktails and food menus. He has held the position of General Manager and Operations Manager of several restaurants and bars around the world. He has firmly put Peruvian cocktails on the map internationally, winning awards like Best New Cocktail Bar, Campari One to Watch, Highest New Entry and Summum. Díaz has conducted over 30 guest bartending and masterclasses on 4 different continents and continues to travel around the world sharing the culture of Carnaval.
