Ali İhsan Pirgan was born in Bursa at 1970 and studied medicine at Ege University Medical Faculty. After 5 years of practicing as a doctor, he moved on to the pharmaceutical industry, where for 18 years he was involved in sales and marketing. It was then Pirgan decided to switch careers.
He started his Grand Diplôme® at Le Cordon Bleu in Istanbul in May 2015 and after completing his studies, met his business partner. Together, they opened their first artisan bakery shop in 2016.
They produce sourdough breads, croissants and traditional bakery products while also catering for sugar-free, gluten-free and vegan clients. During the day, hearty and healthy meals are also served in their café.
