With a background in administration, having studied at Ricardo Palma University, Carolina Uechi chose Le Cordon Bleu to support a career change. After completing her studies at the culinary and hospitality institute in Peru, she started her career on the grills at Gian&Marco Steakhouse which she thoroughly enjoyed. She went on to work at Tinto&Bife and Los Cantaros de Molinas gaining all the experience she needed to open her first restaurant La Cocina de Caro. After operating for several years, she closed La Cocina de Caro, and changed concepts to open her first steakhouse in 2015 called KILO. Today, Uechi and her partner are about to open a second KILO in the San Isidro district in Lima, Peru.
