Florent Gérardin began his career in La Rochelle, France at the Restaurant of Richard & Christopher Coutanceau, and worked for Joël Robuchon and Alain Ducasse. Since 2009 he has been sous-chef at the Restaurant Vue du Monde in Melbourne.
