Kerby Craig won six-consecutive Sydney Morning Herald Good Food Guide hats as Head Chef at Koi Restaurant in Woolwich and for his fine dining Restaurant UME. He now runs Ume Burger, inspired by the street counter-culture of Tokyo, with two Sydney locations (Barangaroo and Darling Square)
