Luis Machado started his career as a chemical engineer working in the oil industry, but in addition to his passion for chemistry and thermodynamics, he was equally passionate in the kitchen, which he feels is like his “own personal chemistry lab”. His first experience cooking was helping his grandmother prepare large family meals and he was inspired by how she made everyone so happy.
Machado graduated from Le Cordon Bleu Paris in 2011 and immediately started working for Chef Joël Robuchon at Atelier Saint Germain. His goal however was to have his own restaurant, so he enrolled into an MBA programme and focused on Gastronomy and Wine. After completing his diploma in 2014, he opened Ají Dulce food truck that same year. Ají Dulce was the first Venezuelan food truck in Paris and was in honour of this key ingredient in Venezuelan cuisine. In 2016, he opened a restaurant in the 9th district of Paris where he can share dishes that remind him of home.
