Pablo Tordesillas studied at law school, but switched to a career as a chef after gaining experience at ther Michelin-starred London restaurant, Fulham Road. Largely self taught, and a fan of cookbooks, we went on to work in iconic London restaurants including Bibendum and The Square. In Barcelona learned the techniques of modern gastronomy at the restaurant of Jean Luc Figueras. Returning to Australia with his wife who was born there, he opened Ortiga restaurant in Brisbane in late 2009 with Simon Hill. Tordesillas is current based in Sydney, acting as Head Chef for the Merivale group.
