Scottish-born chef Raymond Capaldi set up the Sofitel cooking academy at the Hotel Sofitel in Melbourne, Australia in the 1990s. He received the ‘Scottish Chef of the Year’ award in 1992, and his career has included roles at top global restaurants including the Dorchester Hotel. He is now director of Wonder Pies, a gourmet pie company in Melbourne.
