Rosita Yimura (1942-2004) was known for her innovative creations and for her fusion of Peruvian cuisine. Indeed, she is considered a female pioneer of Nikkei cuisine. The daughter of Japanese immigrants, she learned to cook by watching her father when she was a child. Employed for three years at Augusto Kague’s ceviche restaurant “Ah Gusto”, in her hometown of Callao, she later opened her own restaurant, “Salón Rosita”, where she developed her gastronomic talent and created several famous elaborations, such as olive octopus and seafood tacu tacu.
