Rufus Estes (1857-1939) was born a slave in Murray County, Tennessee. Good Things to Eat as Recommended by Rufus, published in 1911,was one of the first published cookbooks by an African American author. Estes worked for many years as a chef for the Pullman Private Car Service railway company, serving luxurious meals to industry barons and even American presidents.
