Australian chef Damien Pignolet has been an influential chef and teacher of cookery for more than four decades. He trained at the William Angliss College of Catering in Melbourne. In 1979 he moved to Sydney where he made his name working in the restaurant Pavilion in the Park. From 1981, he owned Claude's in Woollahara, where he later opened Bistro Moncur in 1992 in partnership with Ron White. From 2004-2011 he was executive chef and co-proprietor of the Bellevue Hotel and Dining Room, and since then has consulted for numerous restaurants. He is the author of two cookbooks, French and Salades.
