Florence Knight studied at the London College of Fashion before deciding to follow her passion for food, enrolling at Leiths School of Food and Wine to train. She went on to work with the French master baker Richard Bertinet, as a pastry chef at the Diamond Club, where the kitchen was led by Raymond Blanc.
Florence was head chef at Polpetto from 2010 to August 2015, the small Venetian-inspired restaurant owned by Russell Norman. Here she earned widespread acclaim and established herself as one of the leading young talents of London’s restaurant scene winning accolades, such as a Michelin Bib Gourmand.
Florence is now a Sunday Times columnist, and is currently working on her second cookbook following her first, ONE: A Cook and Her Cupboard, which was published in July 2013 by Saltyard Books. Florence is opening a new restaurant in 2016 with details to be confirmed.
