Paolo Petroni was born and works in Florence. He is Honorary Delegate of the Florence Delegation of the Italian Academy of Cuisine, coordinator and supervisor of the national recipe book of the Italian Academy of Cuisine "Tradition at the table" and director of the magazine "Civiltà della Tavola". He is Honorary Delegate of Florence, Vice President of the Académie Internationale de la Gastronomie and President of the Italian Academy of Cuisine. His numerous books on gastronomic culture are known and appreciated both in Italy and abroad for their clarity of presentation, historical rigor, completeness and simplicity of the recipes he offers. He is the author of many cookbooks: Il libro della vera cucina toscana (Demetra, 2023), Il libro della vera cucina fiorentina (Demetra, 2022), Il libro della vera cucina marinara (Demetra, 2021).
