Salmon Trout with Hop Shoots

Between the end of April and the beginning of May salmon trout start to appear. Similar to look at as the salmon but with the flesh of a trout, this delicate fish can be used in the same ways as the salmon. Hop shoots – a little known delicacy – also appear at the end of April. These are the trimmings of the hop fields. Each plant throws out a large number of shoots, but only a few are required by the farmer; the rest are picked out and discarded. Long ago the shoots were considered a delic
