I came across “Mock Apple Pie” in a Saveur cookbook and took it on as another old-school recipe that I wanted to modernize. The original is said to have been created during the American Civil War, when rations were tight. Crackers were substituted for apples and baked with water, spices, and sugar, for a result that does indeed resemble apple pie filling.
