This giant croissant was inspired by the New York Times food section, after having seen Sohla El-Waylly’s beautiful version. Here I use my Cheater Croissant Dough and fill the croissant with apricot jam and frangipane, then top with almonds.

1) Line a sheet pan with parchment paper.

2) Lightly flour a work surface and roll the dough into a 20 by 12 in [48 by 30 cm] rectangle. Spread the almond cream evenly over the top of the dough, followed by the jam.
