Crème fraîche is similar to sour cream but with a gentler tang and a higher percentage of butterfat. When introduced to high temperatures, it withstands heat and doesn’t break.

In a large bowl, whisk together the cream and buttermilk. Cover the top of the bowl with several layers of cheesecloth and place a rubber band or tie a string around the bowl to keep the cheesecloth in place.
