If you forgot it was Meatless Monday, try this plant-based recipe for Taco Tuesday! Serve the fajitas with warmed whole wheat tortillas and any combo of accoutrement—salsa, avocado, or cheese. Look in your supermarket’s produce section for the fajita veggies, typically sliced and packaged in-house.
In a medium bowl, combine the olive oil and seasoning. Add the vegetables and toss until all the veggies are coated in the spice mixture. Add the portabella slices and gently toss.
Transfer the vegetables to the cake barrel
