Date night in can be just as fabulous as going to a fancy restaurant. Make this dish extra special and serve with roasted purple potatoes, Lemon-Pepper Green Beans, and a nice glass of sauvignon blanc. If you can’t find pork medallions, slice them from a 1-pound pork tenderloin (freeze the other half).
