Ponzu sauce is a Japanese citrus dipping sauce; look for it in the Asian aisle of your supermarket. Find Valencia orange peel in the spice aisle, or substitute fresh thinly sliced kumquats or fresh orange zest for a brighter flavor. Serve these skewers with brown rice and a green salad.
In a medium bowl or ziptop plastic bag, combine the ponzu, orange peel, coconut sugar, and a large pinch of salt and black pepper. Add the steak, coating thoroughly, and refrigerate for several hours (even better overnight).
Remove the meat from the refrigerator and allow it to rest at room temperature for 15–20 minutes.
