This is one of our favorite recipes in the book. Try it, and you’ll see why. We like them extra spicy, so we prefer Patak’s hot curry paste. If you’re new to curry paste, try a more mild yellow or green Thai curry paste. All are located in the Asian or Indian section of your supermarket.


  • 2 large eggs
  • 2 tablespoons curry paste
  • 1 medium sweet potato, peeled and grated (about 2 cups loosely packed)
  • ½ cup whole wheat flour
  • ½ cup frozen peas, thawed and patted dry


    Preheat the air fryer to 400°F for 5 minutes.

    In a medium bowl, whisk together the eggs and curry paste. Add the sweet potato and fold in with your hands to coat. Slowly mix in the flour and a pinch of salt and cayenne. Add the peas.

    Spray the inside of the fry basket with cooking spray. Carefully place small mounds (scant ¼ cup) of the mixture evenly around the bottom of the basket. Spray the fritter mixture with cooking spray.

    Cook 4 minutes. Turn the fritters over, spray them with cooking spray, and cook until they begin to brown on the edges, 4 minutes more.
