Serve this delicious pink hummus with sliced veggies or Everything Pita Chips, or use it as a spread on sandwiches in place of traditional condiments. When cooking beets, make sure you don’t ditch the greens. They are said to have a higher iron content than spinach and are great sautéed with a little olive oil, salt, and a dash of balsamic vinegar.
