Maybe you’ve heard of the elephant ear plant. Well, taro is its root. Though it’s a staple in many tropical island nations, the taro root can look pretty intimidating. Once peeled and cooked, it becomes a delicious mineral- and vitamin-rich vegetable with about 3 times the amount of fiber as in a potato. Try it mashed like potatoes too! Be sure to enjoy it fully cooked as it is toxic raw.
