There’s just something so special about the citrusy kumquat that packs such tartness in that little fruit. Try them here, or wherever recipes call for orange zest, to brighten any dish. With pear, it’s a perfect marriage of sweet and bright that’s sure to satisfy. If kumquats aren’t in season, substitute with 2–3 tablespoons dried cranberries. Traditional tarts have crusts that are loaded with butter, and they’re often topped with whipped cream. This version slims down by slashing the fat.
