Both methods for this are based on Carciofi alla Romana. Serve hot, warm or at room temperature.

Ingredients

  • Cut the artichokes in half longitudinally and grill for 10 minutes on the cut face, then 5 minutes on the round outer surfaces
  • Season whilst cooking, with salt and pepper, then dress with top-quality olive oil

    1. From raw Prepare the artichokes as for alla Romana, but do not cook them. Cut the artichokes in half longitudinally and grill for 10 minutes on the cut face, then 5 minutes on the round outer surfaces. Season whilst cooking, with salt and pepper, then dress with top-quality olive oil.
    2. From cooked Assuming you have some cooked Carciofi alla Romana, drain, cut in half, season and grill over a fierce heat on the cut surface.
