This is a sophisticated dish, using a number of the previous recipes in the Antipasti di Verdura section – dinner party stuff.
Mix all together, except for the mozzarella, and check the seasoning. Serve mounded in soup plates, but remember this is a starter, so not too big a portion. Grate the mozzarella over the vegetable salad. Serve with bruschetta if you insist.
