‘Thick’ Carpaccio di Manzo


Make the rocket salad and arrange on your best large serving dish. With a U-shaped potato peeler make about two dozen Parmesan shavings. Slice the meat vertically across the cylindrically shaped piece of meat. You should try and do this as thinly as you can using a thin, long knife, preferably very sharp.

Arrange these slices of meat on the bed of rocket; there should be about four per person. Drizzle with top-quality olive oil, season lightly and scatter with Parmesan slivers. Serve immediately (do not refrigerate).
