This oil, easily made and virtually eternal if stored in the fridge, keeps cropping up throughout the book. You may become addicted to it.


  • 500 ml good olive oil
  • 12 small dried chillies, rehydrated by soaking in warm water for 10 minutes, dried and chopped
  • 2 bay leaves
  • 2 lime leaves (optional)
  • 1 sprig fresh rosemary
  • 4 garlic cloves, peeled and roughly sliced


Heat all the ingredients over a very low heat for half an hour. Allow to cool and bottle. Keep in the fridge when not needed.
