Avocado Pears and Prawns


  • 2 large Avocado pears
  • 2 tablesp. olive oil
  • 2 tablesp. vinegar
  • good pinch of salt
  • good pinch of pepper
  • a little mixed mustard
  • 2 teacups (about ½ pt.) shelled prawns
  • crisp lettuce leaves
  • lemon
  • pinch of sugar (optional)
  • ¼ crushed clove of garlic (optional)


Halve the pears. Blend the oil, vinegar and seasonings together. Toss the prawns in this, and then spoon into the pear halves. Put on to crisp lettuce leaves and garnish with wedges of lemon.

A pinch of sugar can be added to the dressing if wished, also a little garlic.
