  • 2 large grapefruit
  • 1 oz. butter
  • 1–2 oz.


Halve the grapefruit and loosen the pulp from the skins, discarding pips and pith. Spread with the softened butter and sprinkle sugar and spice over the top. Put for about 4 min. under a hot grill or for 10 min. in a fairly hot oven (400° F., Gas 6). Decorate with cherries and serve at once.
