Creamed Lobster


  • 1 small cooked lobster
  • 1 oz. butter
  • 2 egg yolks
  • ½ gill cream or creamy
  • white sauce
  • good pinch of salt
  • pinch of pepper
  • pinch of grated nutmeg
  • 8–10 small rounds of fried bread or toast; or 2–3 slices of toast
  • parsley


Remove the flesh of the lobster from the body and claws, and cut this into flakes. Cook in the butter for about 5 min. only—no longer as this toughens the lobster meat. Add the beaten egg yolks and cream or white sauce, the seasonings and nutmeg, and heat gently until the mixture thickens. Put on to the rounds of bread and garnish with parsley.
