  • 1 large thin or 2 small thin cucumbers
  • oil
  • vinegar seasoning
  • 1

Method

Peel the cucumbers and cut them into 1-in. thick slices. Cut out the centre portion, place rings on a dish, and pour over a little oil and vinegar; season well. Pound the crab or lobster meat, and mix with mayonnaise. Drain the cucumber shapes and fill the cavity with this mixture. Twist a whole anchovy fillet round each, and place a slice of stuffed olive on top. Garnish with parsley.
